Why can't you eat them?

I understand there is a disease factor, but I don't know more than this.

Does this prevent their consumption?

So you shoot them and have the meat tested, I imagine.

Sort-of like CWD in deer, no?

Yep...................unless you are really effen starving........

Actually, I don't eat them,
most of the folks around where I shoot just want them dropped in their yard,
what they do with them I do not know, I don't ask, nor do I care.....

Well, this is certainly a species that needs to be aggressively controlled.

It just seems a shame not to receive delicious bacon after hunting them.

When I was a kid, a good friend of mine was a hog farmer. They also had some cattle. When a cow would die, my buddie's dad would haul it behind the tractor into the hog yard, and slit its belley. Those hogs would have the whole thing gone in a few hours, bones and all.

I would think a few well placed holes (both in the earth, and in the hog) would be in order... Bury them, cause I can only imagine the stink that would be around for weeks if you let them lay... ISH

After doing this for several years, I assure you that they (hogs or coyotes) will not lay around for days or weeks.....
and I will not exert the energy to dig a hole, drag them into it, and bury them.....
the other hogs and other scavengers including coyotes, skunks, bears, etc....will devour them by the end of the day....

Seems like the perfect time to use a game camera.

Lots of picture of wildlife? Time-lapse photography?

I took a lot of pics of lions around a kill. It's nature in action. Not all of it is pretty flowers and butterflies.
