Is there any way to stop email notifications on updates to subscribed threads?

click on the link for "unsubscribe topic" at the bottom.
The other option is to go to "User Control Panel" > "Manage Subscriptions" on the "Overview" tab

No way to stay subscribed but turn off email notification?

If you "bookmark" a topic, it's the same as subscribing, without the notifications.
Go to the user "portal" page - the link is just under the MNGuntalk.com logo.
On the portal page, under your avatar, there is a link to bookmarks.
