That’s not St. Louis style pizza. St. Louis style is kind of like a crispy thin crust pizza like a savoy or carbones. But what really makes it St. Louis style is the cheese that they use. People apparently either like it or they vehemently dislike it. It’s called Provel. It’s a processed cheese that is a combination of provolone, Swiss, and white american I think. It’s softer and gooey-er than the traditional mozzarella that everyone else uses.
