As to sights, I use a simple set of 3 dot combat sights and have never felt the need for anything fancier.
As for triggers, length is going to depend on the size of your hands. I have a long trigger for my large hands. For trigger weight on a carry piece, I wouldn't go any go any lighter than 6lbs.

Mine haven’t but I suppose they are not of the right vintage.
I have seen a number of older rifles where the bluing goes to a different color over time. They usually call it patina, but it’s an artifact of how the bluing was done.
