If I'm paying 8 bucks for breakfast, I'd like it to taste good. I won't be returning.

Yup.
Having set up group gatherings for a couple decades now (not just you guys), buffets are ideal because:
1) you don't have to reserve a set number of seats and then worry about too few or too many showing up versus what you promised
2) you don't have to dick around with 3 or 4 interactions with staff before you get your food (seating, beverage, order, salad, check back, etc)
3) the food is ready to go right away
4) people can show up late and still get their food quickly
5) people can leave early and still get their food
6) people can get as much as they want
7) if someone takes something they don't like, they can just pitch it and start over
8) you aren't glued to your seat, if you want something, go get it
