Its getting to be that time again...

Venison stash in the freezer is getting precipitously low...deer stand is still standing, rifle is cleaned, lubed, and sighted in, and there was a group of 6 does and 2 bucks on the trail cam as of last weekend.

Sheesh, only 2 months until deer camp...

How do you like to prepare your venison? I gave up deer hunting since the only way I could eat it was mixed with pork (venison sticks, sausage). Now I just butcher a hog. I kinda miss sleeping in a deer stand though...

Just watched my first episode of 'Duck Dynasty'...wondering what's the buzz about....they had the genius idea of mounting an entire travel trailer (complete w/ kitchen, refrigerator, microwave etc) 10 feet up in a tree as a hunting stand.

I like that kind of thinking.

These are my favorite camp recipes:

For steaks. Marinate overnight in coffee, ginger and soy sauce. Pepper outside with coarse fresh ground pepper (alternate chopped chipotles, know your audience). Lightly grill over high flame for 2 1/2 minutes per side. Slice thinly. Serve with crackers and good hard cheese.

For chops. Marinate overnight in coffee, pineapple juice. Pat dry. Rub with paprika, chili powder, garlic powder, onion powder, kosher salt, pepper and chipotle dry rub. Hardwood smoke with indirect heat for 1-2 hours, basting frequently with brown sugar/pineapple juice mop. Slice thinly.

For roast. 1 can coke, 1 packet onion soup mix. Place roast in oven bag. Pour coke over roast. Sprinkle onion soup mix into bag. Seal. Bake at 325 for 2-3 hours (depending on size of roast(s)). Serve with roasted potatoes, carrots and green salad (or cole slaw) and biscuits.

For burger/taco meat. Grind into hamburger. Brown in well oiled skillet. Add half a beer, and packet of taco seasoning. Serve with tortillas, shredded lettuce, cheese, sour cream and guac.

Chili con Veni. Grind into hamburger. Brown in bottom of large stew pot. Add chopped onions, celery, saute until translucent. Add can(s) of stewed tomatos, can(s) of red kidney beans (rinsed) chili powder, garlic powder, Worcestershire, and chipotle peppers to taste. Simmer for 2 hours. Serve with corn bread.

never heard of using coffee in the overnight marinade........hmmm............

Tannic acid in the coffee helps breakdown the muscle fibers (tenderizing) and it also eliminates some of the gamey taste if your deer spent time browsing in a cedar swamp - make it a strong brew!

My cousin mounts his fish house on top of a grain wagon.
I think he and his friends contribute a lot of recycled aluminum cans.

Only 5 days until bear camp though the bears probably won't move much during the day until things cool down a bit. A week later for the geese, I hope it cools down too. the warmer it is, the less likely they are to leave the golf courses and parks.

We either marinate over night in Italian dressing and grill or pound flat, dredge in eggs roll in crushed captain crunch and pan fry. Kids can't get enough.

I'm not archery hunting until the temps are below 50F this year. I shot my doe opening afternoon last year, and it was a mad dash to get her cooled down and cut up (as such, I did a bad job and got freezer burnt meat). I don't really plan on being in the woods til after October. Might shoot some squirrels and trap some coon though.

I'm still getting itchy.

I was having trouble sitting in the stand. Decided for my own personal record of opening day tag-out, and I always wanted a red-brown pelt. Got both objectives and a yummy deer.

Bone doesn't taste good. ;)

Federal has their annual pre-deer season rebate going on. Picked up a couple boxes of sabots, hard to pass up 5 dollars off a box. I still have 2 plus months of waiting.
