These are my favorite camp recipes:
For steaks. Marinate overnight in coffee, ginger and soy sauce. Pepper outside with coarse fresh ground pepper (alternate chopped chipotles, know your audience). Lightly grill over high flame for 2 1/2 minutes per side. Slice thinly. Serve with crackers and good hard cheese.
For chops. Marinate overnight in coffee, pineapple juice. Pat dry. Rub with paprika, chili powder, garlic powder, onion powder, kosher salt, pepper and chipotle dry rub. Hardwood smoke with indirect heat for 1-2 hours, basting frequently with brown sugar/pineapple juice mop. Slice thinly.
For roast. 1 can coke, 1 packet onion soup mix. Place roast in oven bag. Pour coke over roast. Sprinkle onion soup mix into bag. Seal. Bake at 325 for 2-3 hours (depending on size of roast(s)). Serve with roasted potatoes, carrots and green salad (or cole slaw) and biscuits.
For burger/taco meat. Grind into hamburger. Brown in well oiled skillet. Add half a beer, and packet of taco seasoning. Serve with tortillas, shredded lettuce, cheese, sour cream and guac.
Chili con Veni. Grind into hamburger. Brown in bottom of large stew pot. Add chopped onions, celery, saute until translucent. Add can(s) of stewed tomatos, can(s) of red kidney beans (rinsed) chili powder, garlic powder, Worcestershire, and chipotle peppers to taste. Simmer for 2 hours. Serve with corn bread.
